Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In first reach in cooler to kitchen. Milk, Ranch, Butter, ham, Hot dogs, Gouda, frie,,Queso shredded, Salami, Ceaser. 45-48F Over 4hrs per operator. Operator discarded all food.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Beans cooked at 10am. Found in cooler with lid on at 67F at 2pm. Advised to immediately put container in freezer to get beans to 41F within the remaking 2hrs. Advised operator on proper cooling method
