At Countertop steam table; cooked chicken (100F - Cooling 2:18pm/cooked chicken 100F - Cooling 2:43pm). Operator stated chicken cooling for 1 hour, stored in full, covered pan inside steam table. At this rate chicken will not reach 70F within 2 hours. Operator removed from steam table, placed in reach in freezer uncovered to facilitate faster cooling.
