Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In a tin single service pan stored on ice, cut tomatoes (63F - Cold Holding); cut lettuce (65F - Cold Holding) discussed with employee and additional ice added. Went over time as public health control with employee and operator and filled out written procedures.
