Advised to split container during cooling stage and verify product reaches 70F within 2 hours from 135F, and to 41F within 6 hours from 135F. Deep containers do not allow for dense product to adequately cool without other steps such as ice bath surrounding hot food while extensively stirring.

Unit showing significant condensation throughout unit, air flow appears blocked by stored bags of ice cream stacked under vent at top of unit..
