Manager and employees began the process of cleaning up the roach droppings.

Observed cheese (46F - Cold Holding); cut tomatoes (52F - Cold Holding); cut lettuce (57F - Cold Holding) held on pans on ice with ice only touching bottom of pans. Unable to keep foods at 41F throughout the product. Foods out less than 4 hours, must discard by 300pm. Explained time as a public health control and gave paperwork via email. Operator will use time as a public health control or may look into acquiring a preptop cooler.
