Equipment in poor repair. Two tall freezers have torn gaskets on the doors, causing frost to build up around the doors.
No handwashing sign provided at a hand sink used by food employees.
Stored food not covered. Ice cream sandwiches in the freezer were uncovered.

No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Provided DBPR handouts Form HR 5030-103 and 5030-203 and also showed Operator an alternate form in the back of the Florida Restaurant and Lodging training books and educated Operator that all employees must have a signed copy on file prior to beginning any work in the kitchen.

Employee rubbed hands together for less than 10-15 seconds while washing hands. Observed employee washing hands between task rinsing off soap after rubbing hands approximately 5 seconds. Spoke with employee about proper handwashing techniques, employee rewashed hands correctly before returning to work.
Carbon dioxide/helium tanks not adequately secured. 3 unsecured in back of kitchen.
Label on a food item prepared and packaged onsite for customer self-service does not include product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food. Cakes and ice cream cups packaged for customer self service missing date packaged. Repeat 12/15/2022, 10/11/2021.
Raw fruits/vegetables not washed prior to preparation. Observed bananas being cut into before being properly washed, stickers still attached. Spoke with operator about proper washing of produce prior to being prepared.
