Time/temperature control for safety food not cooled from ambient temperature to 41 degrees Fahrenheit within four hours. See stop sale. Inside reach-in cooler near cookline: chicken wings (46F-50F - Ambient cooling overnight). Chef stated the chicken wings were seasoned and marinated the previous day, then placed into the cooler to marinate overnight. The chicken wings are cooling in a very large covered plastic pan. Chef stated the chicken wings have not been removed from the cooler today.

Inside reach-in cooler near cookline: chicken wings (50F - Ambient cooling overnight). Chef stated the chicken wings were seasoned and marinated the previous day, then placed into the cooler to marinate overnight. The chicken wings are cooling in a very large covered plastic pan. Chef stated the chicken wings have not been removed from the cooler today. Stop sale issued.
