What the inspector wrote — 10 findings
Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine chlorine 0ppm. The dish machine has already been in-use today. The manager primed the machine, then chlorine 50ppm. Inspector instructed manager to sanitize all dishes that have been sanitized using the dishwasher machine earlier today.

Observed the following items and cold holding temperatures in the flip-top make table cooler in front of grill: Tomato (50F - Cold Holding); ham (46F - Cold Holding); Sausage (46F - Cold Holding). Flip-top make table cooler ambient temperature was 48F. Manager advised that all the item had been taken out of the walk-in-cooler less than two hours earlier. Manager had all items placed in walk-in-cooler.
