Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw chorizo stored above ready to eat syrups, milk and next to cooked food and cheese inside the reach in cooler. Operator placed on bottom shelf.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Chlorine above 200ppm. Operator diluted, second test 100ppm.
Certified food manager unable to answer basic Food Code questions pertaining to safe operation of establishment. Observed manager was unaware of how to calibrate the probe thermometer. Operator was coached on procedure.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed operator test strips are for quaternary but using chlorine. No chlorine test strips available.
Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed water at 71°F running for 5 min. Operator was able to get hot water running, 2nd test 90°F.
No container installed for catching grease from hood drip tray. Operator was able to find and put into place.
