Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed Poultry (112F - Hot Holding); Moro (111F - Hot Holding); for less than 4 hours as per operator, located in steam table. Operator reheated at 165°F.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed sanitizer bucket with chlorine sanitizer solution of 200 ppm. Operator add water, rechecked 100 ppm.

At front counter on the steam table observed Sweet plantains (112 F - Hot Holding); Cooked beef enchiladas (110F - Hot Holding), as per manager food was stored on the steam table less than 1 hour. Instructed operator to reheat food.
Employee washed hands in a sink other than an approved handwash sink. Observed employee wash her hands after in the three compartment sink.
