Observed at cook line in a prep cooler eggs white (49F - Cold Holding); pooled eggs (49F - Cold Holding), cook stated food was placed in unit for about an hour, cook removed food to another cooler to rapidly cool down. Observed in the refrigerated drawers underneath the flat grill at cook line ham (49F - Cold Holding); cheese (49F - Cold Holding); turkey (50 F - Cold Holding), as per cook food was stored in cooler about 3 hours, manager removed food from unit and transferred it to walk in cooler to rapidly cool. Observed in prep cooler at sandwich station observed sliced tomatoes (47F - Cold Holding); cheese (50F - Cold Holding); cut lettuce (50F - Cold Holding), as per cook food was stored in unit for about 2 hours, cook decided to to discard tomatoes and transferred the rest of the food to the walk in cooler for a rapid cool.

Observed AC fan at walk in freezer dripping water over boxes of food stored directly under the unit, boxes of were vacuumed sealed, no contamination was observed. Instructed manager to remove all food products from underneath of AC fan and all around water condensation is falling.

In the reach in cooler located by the flat grill observed polled eggs (50F - Cold Holding), as per cook for less than 1 hour, employee added ice to cool down quickly, observed in the refrigerated drawers under the flat grill sausage (50F - Cold Holding); cooked steak (51F - Cold Holding); raw chicken (51F - Cold Holding), as per employee for less than 2 hours, employee transferred food items to another working cooler, observed in the cooling unit in front of the flat grill sautéed vegetables (55F - Cold Holding), as per employee for less than 4 hours, employee removed food item and transferred it to another unit to rapidly cool down.
