Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the flip top cooler at the end of the cook line, container of sliced cheese 58F. Cheese placed into cooler approximately 30 minutes prior. Cheese voluntarily discarded.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed plated sausage atop prep table next to grill station placed their 30 minutes prior per employeea¿¿with temperature of 90F hot holding. Person in charge placed sausage back in oven. Retemped sausage after 45 minutes at 165F hot holing.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed vacuum breaker in wrong place. Attached directly to main spigot instead of non-chemical side of splitter on mop sink. Contractor onsite stated would place breaker in correct place.

Observed cup of tea with no lid or straw atop drying rack next to triple sink. Employee placed lid and straw into cup and removed.
Equipment and utensils not properly air-dried - wet nesting. Observed wet nesting on metal food bins atop drying rack near triple sink.
