Rodent activity present as evidenced by rodent droppings found. In cabinets under front counter used for electronics storage, 15 droppings observed under right side computer screen, 10 in empty cabinet under coffee station. No food, single service articles or dish ware/utensils in cabinets.

Observed cut tomatoes (44F - Cold Holding); liquid egg (45F - Cold Holding); raw shell eggs ambient (50F - Cold Holding) in the reach in cooler near the grill. The operator stated the items have been held for approximately 3 hours. The operator moved the above items to the walk in cooler.
No soap provided at handwash sink at the entrance to the cook line. The operator placed a new soap in the dispenser.

On cook line Observed employee crack raw shell eggs then handle clean dishware. Spoke with employee and manager about proper handwashing, employee properly washed hands before returning to work.

Observed a server handling dirty dishes in coffee station, begun to hand,e single service cups, no handwash. Spoke with employee about proper handwashing, employee washed hands properly before returning to work.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cook line rice next to egg station burners:; raw eggs (48F - Cold Holding); cut tomatoes (47F - Cold Holding); cooked vegetables (50F - Cold Holding) for 2 hours per operator during breakfast rush. Operator kept unit closed during inspection, observed 2F drop in all foods.
