Observed prepared items with date marks until original plastic wrap removed. Then no date marks. Place sticker on the pan. Observed sausage, hotdogs, open cheese, grouper, pork chops, etc. all 25-36 hours since preparation, no date marks.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed grouper in reduced oxygen packaging starting to defrost. Operator removed from package and coached accordingly.
