Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit: Prepped chicken on counter in fry station temped at 46° F. Employee states less than 15 minutes. He immediately iced it down. 20 minutes later retemped at 40° F.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly: - dish machine sanitizer tested to 0ppm. Kitchen manager changed out the container, primed the dish machine, and set it to run a cycle. Retested to 100ppm.
Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature: - pan of commercially packaged raw chicken on shelf in reach-in cooler over pan of raw pork chops. Kitchen manager rearranged the items for proper storage.
