Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Staff in kitchen observed removing equipment from dish machine and immediately drying with dry cloth before stacking on shelf. Discussed with staff to ensure sanitizer properly dries on equipment. Following said observation, it was discovered that sanitation solution bucket was empty. Staff was instructed to refill, prime machine and rewash equipment.
