Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Blanched French fries (48F) stored at room temperature. Cook stated fries were taking out of the cooler 30 minutes ago. Cook placed fries inside main reach in cooler. raw chicken (45-48F); cooked beans (45F); provolone cheese (44-45F) in walk in cooler. Walk in cooler has an ambient temperature of 38F. Manager stated cooler door was left opened for a while approximately an hour ago. Manger properly closed cooler door.

Manager only provide a a few employee training certificates, she stated she is missing 6 more but could not find them.
