Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use. In the larger stand alone sliver cooler in the main kitchen area, observed 4 packs of raw white fish and 2 packs of raw salmon in the thawing process, not completely thawed but not removed from reduced oxygen package. Discussed with operator on how to properly thaw raw fish that comes in commercially reduced oxygen package. Operator removed raw fish from reduced oxygen packaging.
