Operator states Items were placed in cooler about one hour ago and moved to another cooler to quickly cool within 4 hours to 41F or colder.

Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed chicken and brown gravy in walk-in cooler with no date mark. Operator stated that the items were two days old and dated accordingly.

Employee eating in a food preparation or other restricted area. Observed waitress outside front counter drinking from open beverage glass then walk behind counter drink from cup then pour remainder ice in handsink,then svoop ice and put ice on cup she drank from touching lip contact area of cup with ice scoop then rescoop more ice. Inspector advised ice in that corner scooped away with a different scoop,and scoop that touched cup lip was sent to dishwash.
Equipment in poor repair. Observed salad expo cooler leaking water on interior and exterior. Ambient air temperature at 49F. Operator will not use until able to maintain temperatures of foods at 41F or below. Manager called repair during inspection.
In-use ice scoop for ice machine located outside not stored in a protected manner between uses. Observed ice scoop outside on top of old dusty equipment beside ice machine. Operator took in to dishwash.
