Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside refrigerated make-table at cookline: sliced cheese (50F - Cold Holding). The sliced cheese is stored on a plate sitting above the safe-fill line, above the pans on the refrigerated make-table. Employee at cookline stated the cheese was placed on top the make-table approximately 30 minutes prior, then moved the cheese to inside a cooler to cool to 41F.

Raw shell eggs on counter at cookline missing time mark. Raw shell eggs are indicated as being held using time as a public health control. Employee at cookline stated the eggs were removed from refrigeration one hour prior and added the proper time mark during this inspection.
