Observed hot pickled onions (51F - Cold Holding); fritter batter (57F - Cold Holding); cut cabbage (59F - Hot Holding); butter cubes (53F - Cold Holding)in flip-top cooler on cook line with ambient temperature of 51F. Person in charge states food has been in for about 2.5 hours. Extra food has been moved to walk-in cooler too cool, while working portions have been placed on emergency time control.
