Observed chlorine dishwasher machine at 0ppm. Instructed staff to use the second floor dishwasher machine until the first floor machine in sanitizing correctly.

Observed corn salad (51F - Cold Holding); taboule (50F - Cold Holding); potato salad (54F - Cold Holding) at buffet table. As per operator, products were placed at 12PM. Operator removed products and placed in ice bins for rapid cooling.
Accumulation of debris on exterior of warewashing machine. Observed dish machine with soiled exterior. Operator wiped down immediately.
