Warewashing conducted in outdoor area. Observed a 3 compartment sink at the open air downstairs bar. As per previous plan view requirements the triple sink has been repurposed as a dump sink and blender station. One compartment has been disconnected and covered.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cooked rice held at room temperature of 50 F for about 30 minutes. Person in charge moved it immediately to the cooler.
