Pasteurized eggs or egg products not substituted for raw shell eggs in foods such as Caesar salad, hollandaise or Bearnaise sauce, mayonnaise, eggnog, ice cream, and egg-fortified beverages. Identified foods made with raw shell eggs must be fully cooked prior to service. Observed raw shell egg whites used for certain drinks without a notification on their menu. Operator states they will switch to pasteurized egg whites.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell eggs stored over cut pineapple at the bar. Operator moved the eggs.

Toxic substance/chemical improperly stored. Observed multiple chemical spray cans stored above boxed drinking glasses in the back hallway. Operator removed them.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed buildup running along the back of the ice machine.
Insect control device installed over food preparation area. Observed an insect zapper stored above bottles of alcohol in their mini-bar area. Operator removed it.
Wiping cloth sanitizing solution stored on the floor. Observed a sanitizer bucket stored on the floor of the mini-bar area. Operator placed it off the ground.

Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Operator using sous vise method no plan. Provided information to operator in regards to HACCP plan approval process.
