Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked sausage (102F - Hot Holding) Observed in pan next to flat top. Per operator, out of temperature for approximately 1 hour. Operator returned to flat top to bring up to 165+F.
