Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed an employee crack raw shell eggs then go to handle a melon. I had the operator stop them and change their gloves and wash hands.
Handwash sink used for purposes other than handwashing. Observed their hand wash sink used to stored dirty dishes. Operator removed them.
Wet wiping cloth not stored in sanitizing solution between uses. Observed multiple wiping cloths stored on the cook line and back clean dishes area.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dishwasher machine at 0ppm chlorine. Operator reprised it and tested it at 100ppm chlorine.
Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed the hot water turned off at the front counter hand sink. Operator turned it back on.
Single-service articles not stored inverted or protected from contamination. Observed to-go containers and coffee filters not stored properly. Operator inverted and stored the products.
A return visit. The problems from the previous inspection had been dealt with.

Accumulation of black/green mold-like substance in the interior of the ice machine/bin. There is a mold like substance on the interior walls and around the ice chute in the ice machine behind the bar.

Silverware/utensils dried with a towel/cloth. Utensils are being dried with a towel. Inspector educated the operator that all washed and sanitized utensils must be allowed to air dry.
