Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. sliced white American cheese (53F - Cold Holding) in over filled container in top section of pizza make line cooler with lid open, per manager cheese was placed in cooler maybe an hour ago, cheese moved to bottom of reach in cooler.

In the flip top reach in cooler on the main cook line; sausage (47F - Cold Holding) filled over the fill line and cooling plane. Operator removed top portion of the recently filled product and relocated to the reach in cooler drawers to bring back into temperature range. At conclusion of inspection, sausage (42F - Cold Holding)
