At Make top cooler; string cheese (46F - Cold Holding); cooked chicken (46F - Cold Holding); hash browns (46F - Cold Holding). Operator stated not prepared or portioned today, held overfilled in pans on make top for 2 hours, removed overfilled portions/repositioned pans.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. At mop sink; splitter added with hoses attached on both sides. Advised Operator to install vacuum breaker(s).
