Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On left side make rail upper pasta, steak, cheese, chicken 48-58F. Person in charge states has been out of temperature less than 4 hours. Items are unloaded across from pizza oven. Person in charge closed lid.

Also, cheese on catch tray along edge of tray at 50F. Person in charge states reuses cheese for pizzas. Moved into area holding 43F or below.
