Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. In use triple sink reading 0ppm, manager remade sink to 200ppm.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. Shredded cheese,4 containers, cheese sticks, sliced cheese, 2 container, pork sausage, beef sausage, chicken, feta, shredded steak, sliced ham, cut tomatoes, all items temping between 55F-62F, per manger all items where placed in top section of pizza make line cooler around 9:30am, time of temperature check was around 2:30pm, also per manger cooler has not been working properly for at least a couple weeks and management was notified at that time.
