In the pizza make line cooler, shredded cheese (46-48F - Cold Holding); diced tomatoes (46-48F - Cold Holding); chicken nuggets (46-48F - Cold Holding); cooked sausage (46-48F - Cold Holding); cooked meatballs (46-48F - Cold Holding); cut ham (46-48F - Cold Holding); sliced cheese (46-48F - Cold Holding). The items were placed in the cooler approximately 2 hours ago. The unit was not turned on. The unit was turned on for the items to chill and cold hold.
