Warewashing sanitizing solution exceeding the maximum concentration allowed. Observed Super San quaternary solution in three compartment sink at 500+ ppm. Operator diluted solution to 300 ppm.
Wash solution in spray-type chemical warewasher less than 120 degrees Fahrenheit. Observed dishmachine with chlorine sanitizer at 50 ppm at 108F.
Equipment in poor repair. Walk-in cooler with an ambient air temperature of 47F. All food items in walk-in cooler are 43F and below. Operator has repair company on site servicing machine.
