Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed boneless chicken wings (48F - Cold Holding) at reach-in cooler nearest oven. As per manager less than 4 hours. Top portion of unit was closed to keep heat from oven away from unit.
