Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly: testing to 0ppm. Assistant General Manager called maintenance. Three compartment sink set up for sanitizing: quatrenary amonium 200ppm.
Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233: five employee's training certificates expired in March 2026.

Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature: Raw chicken skewers in pan of sauce over packages of dumplings in glass door reach-in cooler. Kitchen Manager rearrange the items for proper storage.

Shift manager had employee change out solution, prime the dish machine, run 2 cycles. Retested to 50ppm.

Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours: Pan of curry in reach-in cooler had been there for 2 hours no was temping at 107° F. Manager had employee reheat to a minimum temperature of 165° F.
