Food stored outside. Observed cooler that has warmed tortillas. Two containers of Aqua Frescas stored on picnic table outside of food trailer. Observed boxes of chips, fried pork skin, pastries, bread, muffins, stored on picnic table. Observed 2 two coffee urns, and gallon of milk stored on table. Observed whole pineapples, whole tomatillo, whole onions, whole carrots, whole bananas, whole tomatoes, and whole peppers on table outside of food trailer. Manager began bringing in all product.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Steam well: cooked pork with green sauce (127F - Hot Holding). Manager placed on flat top to reheat. Re-temped at 165f. Discussed water level in steam well.
No paper towels or mechanical hand drying device provided at handwash sink. Manager put paper towels closer to hand sink

Observed upright 3 door reach in cooler stored under covered seating area. Unit has whole produce, prepared portion, salsa, and packs of cooked pork and raw bacon. Observed case of whole green peppers and whole onions on table by seating area. Observed nine cases of packaged non-TCS snacks stored outside by tables and seating area. Manager moved agua frescas, and coffee onto trailer.

Food stored outside. Observed three door reach in cooler with frozen cooked meats, lettuce, carrots, tomatillos, house made salsa and cases of frozen shrimp. Discuss with management all also needs to be served from inside of the food truck and moved to storage trailer. Manager began moving foods onto truck.
Unprotected ice machine in a customer/nonsecure area. Observed ice machine outside of food truck that was running, and has ice inside of the bin. Manager disconnected ice machine. Will use purchased bags of ice.
