Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed at the bar area because sanitizer and soap lines were mixed ins the same container. Manager adjusted all chemicals.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw pork above cooked meatballs in walk in cooler. Chef inverted them.
Handwash sink used for purposes other than handwashing. Observed plastic container inside the hand sink at the prep pasta area.
No paper towels or mechanical hand drying device provided at handwash sink. Missing paper towel at the hand sink at the prep pasta area. Station was restocked.
Abrasives and detergents not removed during the rinse process. Observed at the bar area. Detergent and sanitizer line inserted in the same container.Manager readjusted all chemicals.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee bottles of waters next to clean utensils in the ware washing area. Employee moved them.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employees just put gloves on without washing their hands when manipulating food items. No soap provided at the stations. Chef coached the employees and they washed their hands.

Carbon dioxide/helium tanks not adequately secured. Observed CO2 tank at the bar area.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed scoop handle touching the flour. Chef fix the scoop position.

Observed missing sneezeguard at the buffet line : exposed cut watermelon, exposed cut pineapple, exposed cut honeydew, exposed cut cantaloupe at the buffet line. Operator ordered the equipment to protect the food and will cover the food with plastic.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed milk at 52 F inside reach in cooler at coffee station. Chef discarded the milk even though milk was inside cooler for less than 4 hrs.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener with accumulation of old debris. Employee cleaned it immediately.
