Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On back kitchen prep station, under no temperature control, fresh garlic herb butter (71F - Cold Holding); cooked noodles (74F - Cold Holding). Per manager not prepared or portioned today and out of walk-in cooler from use for approximately 45 minutes. Employee returned both to walk in cooler to rechill.
No paper towels or mechanical hand drying device provided at handwash sink. At front counter hand sink. Manager replaced.
Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Batteries dead in both probe thermometers.

Operator moved foods back to walk in cooler to quick chill. Foods not prepared or portioned today.
