Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. On prep station at cookline, rice and beans 118F at 3:25pm (heated cooling 30-45 minutes) to 101F at 3:50pm; stewed goat 121F at 3:25pm (heated cooling approximately 45-60 minutes) to 112F at 3:50pm. Based on times and temperatures taken foods will not reach 70F in 2 hours. Manager moved items to walk in cooler to rapid cool to 70F.
Food-contact surface soiled with food debris, mold-like substance or slime. Center soda gun holster at bar has mold like buildup.
Paper towel dispenser at handwash sink not working/unable to dispense paper towels. Dispenser at expo hand wash sink paper towels not engaging rollers to dispense. Manager corrected.
