Establishment advertised crab on menu/menu board but served imitation crab. Crab Rangoon advertised on menu board on exterior of truck. Per operator, only imitation crab meat is used. Operator changed the "C" to a "K" for the crab on menu board during inspection.
No color/concentration comparison chart available for chemical test kit used to check sanitizer. Chlorine test strips are missing the color comparison chart.
No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. No sanitizer available. Operator brought bleach from the commissary.

Establishment advertised crab on menu/menu board but served imitation crab. Observed Crab Rangoons on menu operator stated it was imitation crab but did had no indicators on menu stating that it was, operator changed Crab to Krab on the menu.
Records/documents for required employee training do not contain all of the required information. Observed two training certification with improper dates, manager applied the correct dates.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Cooler at end of cook line original temperature was 50F, operator tuned temperature to lowest setting, after twenty minutes, temerapture was 44F. Took temperature again after fifteen minutes 43F.
