Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Employee picked up raw beef burger, then picked up fried chicken with the same gloves. Discussed with proper gloves changing and handwashing techniques.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Glass door cooler: sliced Swiss cheese 53 F, raw sausage patty 52 F, raw fish 52 F, cut lettuce 53 F. Drawer cooler under fire grill: raw fish (51F - Cold Holding); raw beef burger (53F - Cold Holding). A container of Shredded cabbage (53F - Cold Holding) stored on table at dining area. Operator moved all these food items to walk-in cooler at time of inspection.
