Located at buffet: shredded cheese (47F - Cooling) portioned at 10am, second temp 48F; sour cream (47F - Cooling) portioned at 10am, second temp 48F. Operator relocated to walk in cooler. Food is on ice, but ice had melted and is only on the bottom of the unit. Discussed using time as a public health control for this area of the buffet if it is not able to cool food properly or hold food at 41f.
