Observed dishwasher machine at 000 ppm chlorine sanitizer. instructed operator they may use the machine to wash dishware and utensils, but must use three compartment sink to sanitize items once they come out of the dish machine and then allow items to properly air dry.
Toxic substance/chemical improperly stored. Observed chemical spray bottle on front waitstaff station counter next to clean silverware. Operator corrected above issues to meet inspection standards.

Observed thawed commercial packed reduced oxygen fish in reach-in cooler at cooks line. Operator stated fish was removed from freezer the day before and then removed fish from packaging. Observed the following temperatures: Tall 2 door cooler:; roast pork (55F - Cold Holding); corned beef (57F - Cold Holding); butter (49F - Cold Holding); sausage patties (56F - Cold Holding). Operator stated reach-in cooler and food was at 40F less then 4 hours prior. Operator moved all items to single door reach-in cooler. Recheck temperature after 35F all items at 41F cold holding.
