Operator placed food items into reach in cooler for rapid cooling. Observed tapioca pearls (74F - Hot Holding) located at front counter area, holding at room temperature, cooked at 11:30pm today, as per operator. Employee submerged container on ice for rapid cooling, took a 2nd temperature, observed tapioca pearls at 41F.
