Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cooked rice -54 ( - Cold Holding), per employee rice taken from refrigerator and left at room temperature, less than 4 hours. Employee placed back food inside walk in cooler for a quick chill.

Per operator, food out of temperature for approximately 3 hours. Recommended using time as a public health control. Provided operator with time as a public health control procedures. Educated employee on proper reheating for hot holding.
Toxic substance/chemical improperly stored. Observed Lysol spray bottles stored on shelf above oven at cook line. Employee removed.
