Observed in reach in cooler unit next to Hashbrown freezer in prep area, Cooked sausage (70F) and cooked chicken (55F). Not prepared or portioned today. Food in unit less than one hour per operator. Operator moved to two door reach in cooler to rapid chill to 41F or below. 2. Observed in prep area, Bacon, no fully crisped (60F), cooked eggplant (60F), and cooked sausage (56F). Not prepared or portioned today. Food in unit less than one hour per operator. Employee forgot to turn unit power on. Operator moved to two door reach in cooler to rapid chill to 41F or below.

Observed quaternary at 0ppm at triple sink in ware wash area. Observed empty container connected to hose at triple sink. Operator replaced quaternary at the triple sink and retested at 200ppm.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
