TCS food greater than 41 F. Observed Cream Cheese (47F - Cold Holding) in reach-in cooler in sandwich station reach-in cooler to the right of the ovens. Operator stated the items had been in the reach-in cooler for less than 4 hours. Operator removed for rapid cooling. Discussed fill lines.
Handwash sink used for purposes other than handwashing. Observed pile of ice cubes in handwash sink to the left of the sandwich making station.
Food stored on floor. Case of cream cheese stored in box on floor underneath shelf in walk-in cooler. Operator moved and stored correctly.
