In make line fliptop unit, FLIPTOP UPPER - butter (47F - Cold Holding); cream cheese (48F - Cold Holding); sliced cheese (48F - Cold Holding) LOWER - commercial cooked eggs (45F - Cold Holding); turkey sausage patties (50F - Cold Holding); sausage patties (50F - Cold Holding); chicken patties (49F - Cold Holding); individual butters (49F - Cold Holding); individual cream cheese (51F - Cold Holding). Per employee no items prepared or portioned today. Per manager, items in unit from 2:00pm. Employees removed items to walk in cooler to rechill.

Observed: - in flip top cooler at make table, butter (51F - Cold Holding); cream cheese (52F - Cold Holding) - in low boy cooler at make table, sliced cheese (54F - Cold Holding); mini bagels (52F - Cold Holding). Per operator, items were not prepared or portioned today. iItems have been out of temperature for approximately 3 hours. Items placed in walk-in cooler to rapid cool.

Stored food not covered. Observed case of patties stored uncovered in walk-in freezer. PIC covered patties.
Wet mop not stored in a manner to allow the mop to dry. Observed at mop sink. PIC placed mop in a way to allow proper air drying.
