Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at 8:40 a.m., butter tamps at 45F in front line reach in cooler. Per operator, butter transfer to unit at 5:00 a.m. Operator removed butter to freezer for quick chill.
