Observed the following food temperatures greater than 41°F sliced cheese (45F - Cold Holding); sausage (46F - Cold Holding) All foods were located on prep line. Prep cooler remains open during operation. All foods out of temperature possibly due to AC in disrepair. Manager put ice bags on all foods for rapid cooling and stated that she would call maintenance to repair AC.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee neck fans stored on prep table in kitchen area. Advised manager and she removed.
