Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cheese (50F - Cold Holding); sausage (50F - Cold Holding); chicken (49F - Cold Holding); milk (50F - Cold Holding) in walk in cooler. Temperature log shows normal operational temperatures until 6:30am when temperature recorded at 47F. Temperatures taken by inspector at 9:10am. Ambient temperature of walk in cooler is 50F. Operator called for repair during inspection with expected arrival of repair person in one hour. Operator moved all time/temperature controlled for safety foods to walk in freezer until repair is completed.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer bucket at drive thru tested at 0ppm quaternary ammonium. Operator remade solution to 200ppm quaternary ammonium. Sanitizer bucket behind front counter on shelf directly next to drink mixes. Operator moved to sanitizer bucket proper storage.
